Penne alla vodka

Penne alla Vodka: The exact origins of penne alla vodka are unclear; there have been multiple claims to the invention of the dish. Penne alla vodka is an Italian-American pasta dish always made with vodka and penne pasta, often made with heavy cream, onions, and sometimes prosciutto, ham, pancetta, or bacon.
- 4 cups Penne or other medium pasta shape
- 1/2 lb Tomato sauce (Marinara)
- 1 cup Heavy Cream
- 1 oz Vodka
- 1/4 lb Prosciutto or hot capicola (Dry Cured)
- 1 small Onion chopped
- 1/4 cup Parmesan cheese freshly grated
- 1 salt and pepper To taste
- 1/2 cup olive oil
- Make your marinara sauce the day before you plan on making your vodka sauce. Chop up your 1 small onion and chop up your prosciutto. The recipe calls for prosciutto and it goes well but sometimes you can substitute cured hot capicola because it is spicy and offsets the heavy cream.
- Heat up your sauté pan (Frying pan) with olive oil and add your chopped onion and prosciutto.
- Cook penne pasta according to pasta box. (Roughly 12 minutes)
- Once the onion and prosciutto begin to brown a little dump the olive oil out of the pan and add your shot of vodka. If you have a gas over, this could cause a flame on your stove. The idea of the flame is to brown up the onion and prosciutto. This does not always happen but the Vodka alcohol should burn off.
- Add your marinara sauce to the sauté pan and than add your heavy cream.
- Add salt, pepper, cheese and parsley. Drain pasta and pour your sauce over the pasta
