Sardine al forno

Baked Sardines: Owing to a close proximity with Sardinia, both the northern and southern regions of Italy claim main courses or appetizers with sardine fish as a primary ingredient.
Ingredients
- 1 lb Fresh sardines
- 2 tbsp Parmesan cheese
- 1/4 cup Raisins
- 1/2 cup Vinegar Red
- 1 salt and pepper To taste
- 1 cup bread crumbs Seasoned
- 1/4 cup Pine nuts Pignoli
- 1/4 cup olive oil Extra Virgin

Instructions
- Obtain fresh sardines from fish market.
- Clean fish and remove head if you want. SPLIT each fish on one side. You can also leave heads if you want to.
- In a bowl mix bread crumbs, cheese, raisins, pignoli and season with salt and pepper.
- Mix bread crumb mixture.
- Place fish on pan and lightly oil fish, stuff fish with bowl mixture.
- Close with toothpicks and bake in pre-heated oven at 375 for about 20 minutes. While fish is cooking, lightly pour vinegar over fish.
