Calamari fritti

Fried Squid: (fried calamari, calamari) Is a dish in Mediterranean cuisine. It consists of batter-coated, deep fried squid, fried for less than two minutes to prevent toughness. It is served plain, with salt and lemon on the side. In Sicily, squid was on every corner, steamed, sauté, and of course fried. This is served anytime a year but is probably most popular on Christmas Eve.
- 1 lb Clean squid with tentacles, bodies cut into 1/3- to 1/2-inch-thick rings
- 2 cups flour All purpose
- 1 salt and pepper To taste
- 2 Lemons Cut
- 1 cup tomato sauce Marinara
- 1 Vegetable oil
- Pick up cleaned squid with tentacles. If you have to clean, clean the ink and cartridges off the squid.
- Working in small batches, toss the squid into the flour mixture to coat. Carefully add the squid to the oil and fry until crisp and very pale golden, about 1 minute per batch. Using tongs or a slotted spoon, transfer the fried calamari to a paper-towel lined plate to drain
- Place the fried calamari and lemon wedges on a clean plate. Sprinkle with salt. Serve with the marinara sauce.
