Ripieno cannoli e conchiglie

Cannoli: Sicilian pastry desserts. The singular is cannolo (or in the Sicilian language cannolu, plural cannula), meaning “little tube”, with the etymology stemming from the Arabic “Qanawat”. Cannoli originated in Sicily in Piana degli Albanesi and are a staple of Sicilian cuisine. They are also popular in Italian-American cuisine. In Italy, they are commonly known as “cannoli siciliani”, Sicilian cannoli.
- 3 cups Ricotta cheese
- 1/2 tsp Cinnamon oil
- 1/4 cup Citron - Candied fruit candied fruit or chocolate chips (do not use both in mix)
- 1/4 cup Semi-sweet chocolate chips candied fruit or chocolate chips (do not use both in mix)
- 1 1/4 Confectioners' sugar
- 3 cups flour
- 1/4 cup sugar
- 1 tsp Cocoa (optional)
- 3 tbsp Shortening
- 1 egg yolk well beaten
- 1/4 tsp salt
- 4 tbsp Wine (Red)
- 1 tsp Cinnamon
- 2 eggs beatin
- Sift dry ingredients. Cut in shortening with pastry blender until pieces are the size of small peas. Stir in eggs, blend in wine, one tbsp at a time until dough comes together. Refrigerate for several hours. Roll to paper thin on a floured surface. Cut 5 in circles. Roll around 6 in stick or cannoli form. Wrap dough so that 1/4 of stick or tube protrudes at either end. Seal by brushing with beaten egg yolk. Fry 2 at a time in deep hot fat 375 for a minute or until golden brown. Lift with slotted spoon onto paper towel and cool. Remove sticks or tubes gently.
- Obtain whole milk ricotta cheese and drain using a cheese cloth or put in a sifter with a bowl at the bottom to drain excess water and milk liquid. Usually approximately 3 days.
- Beat ricotta in large bowl for a 1 minute.
- Add sugar and beat until very light and creamy (5 min).
- Add cinnamon oil, citron, (candied fruit) or chocolate chip and mix.
- Add mixture to a pastry bag. If you do not have a pastry bag, use a zip lock bag to add filling in shells. Cut a small hole in the corner of the bag and work the bag like a pastry bag. Fill shells.
- Dip in chocolate chips or candied fruit.
- Sprinkle with confectioner's sugar.
