Zuppa fava fresca

Fava Bean Soup: Vicia faba, the broad bean, fava bean, field bean, bell bean or tic bean, is a species of bean (Fabaceae) native to north Africa and southwest Asia, and extensively cultivated elsewhere. A variety is provisionally recognized.
Ingredients
- 3 lbs Fresh fava beans
- 1 lg Onion, sliced
- 1 Salt and pepper to taste
- 4 tbsp Extra virgin olive oil

Instructions
- Remove fava beans from pods and RINSE thoroughly.
- Fava (Broad beans in pods).
- Brown onion with olive oil in 2 quart sauce pan. Add Fava and just enough water to cover beans.
- Cook slowly adding salt and pepper to taste and until beans are tender (Usually 20 minutes on low).
- Cooked beans with liquid are serve hot as a side dish and eaten with fresh crusty Italian bread.
- Fresh Fava Sicilian Style.
