Zuppa di scarola

Zuppa di scarola: Escarole soup, this is like Italian wedding soup except not with meatballs. It is popular in the United States, where it is a staple in many Italian restaurants.
Ingredients
- 1 Escarole
- 1 tbsp olive oil
- 1 Salt and pepper to taste
- 4 cups Vegetable broth or water
- 1/2 cup Parmigiano-Reggiano cheese, cut in cubes
Servings: People
Instructions
- Wash the escarole.
- Sauté the escarole in 2 tablespoons of olive oil, adding a little salt and pepper.
- Cut up square pieces of peccorino romano cheese.
- Add water, or chicken stock to pot and let simmer for 15 minutes.
- Add cut cheese to pot and serve.
