Mozzerella con acciughe

Fried Mozzarella with Anchovy: This is a nice side dish and it doesn’t take long to make.
Ingredients
- 1 lg Mozzarella cheese
- 1 Anchovies small can fillets
- 1/2 Cup flour
- 1 Cup olive oil Extra virgin
- 2 lg eggs Lightly beaten
- 1 Salt and pepper to taste

Instructions
- Cut mozzarella in half inch slices, Slice again to make a sandwich, leaving it un-sliced for about a 1/2 inch to keep the slices attached.
- Place anchovy fillets in each sandwich. Fillets can be pieced to keep them within the sandwich. Dip in egg, covering well. Roll in seasoned flour, heat oil 1/8 in frying pan.
- Sauté each sandwich until golden brown on both sides.
- Serve immediately. Serve as a hero sandwich in Italian Bread.
